The 2014 Pinot Gris CuvĂ©e Sainte Catherine is sourced from old vines in the Clos, one plot in the Schlossberg Grand Cru and another, only six-year-old block in the Markrain. The Fallers tend to pick Pinot Gris with a little bit of botrytis “to enhance the body and aromatic structure, “says Catherine. The 2014 is very clear and fresh on the nose, and offers precise Pinot Gris aromas with citric flavors. Supple, lush and round on the palate, but also with a nice definition thanks to the crisp acidity and the mineral freshness, this is a very food-friendly wine with a dry and mineral finish, although with 12.5 g/l residual sugar it is technically a medium-dry wine. “We don’t like to produce our Pinot Gris very dry because otherwise you could drink Riesling,” says Catherine. The alcohol volume of 14.4% is quite proud but, according to Catherine, “Pinot Gris needs a backbone otherwise it gets broad.”
